POSITION DESCRIPTION TITLE: Dietary Manager
REPORTS TO: Administrator
SUMMARY OF POSITION: Directs and supervises staff in Dietary Department. Is responsible for planning, preparing and serving regular and therapeutic diets. Makes final selection of staff and supervises their orientation , on the job training and work performance. Is responsible for disciplinary and discharge of staff. Supervises preparation and serving of food. Requisitions supplies and equipment, purchases the food. Keeps records and completes reports concerning technical and administrative operations. Manages Dietary Department within budget. Follows all Extendicare policies and procedures.
POSITION RESPONSIBILITIES: The responsibilities of this position involve significant physical activities including standing, lifting (up to 60 pounds unassisted), bending, stooping, pushing, pulling and twisting. The tasks on this position description marked with an asterisk (*) are those that regularly require these physical activities. All employees of nursing homes may be required to provide lifting and transfer assistance to residents. Lifting and/or transferring some residents will require use of a lifting device and /or assistance of other staff.
KNOWLEDGE, SKILLS & ABILITIES
1. Ability to read, write, speak, and understand English.
2. *Ability to withstand sudden temperature changes from heat of the kitchen to the cold of the freezers.
3. *Ability to identify chemicals, and properly use and dilute them. 4. Has education or experience sufficient to meet position requirements.
5. Able to relate positively, effectively, and appropriately with residents/patients, families, community members, volunteers and other facility staff. Possess special interest in, and a positive attitude about, working with long-term care residents/patients and the elderly.
6. Meets all health requirements, as imposed by law.
7. Ability to taste and smell food to determine quality and palatability.
8. Ability to handle and manipulate equipment in supervising, demonstrating and assisting in food preparation and serving.
9. Institutional kitchen and/or Long Term Care supervisory experience preferred.
10. Member of Dietary Managers Association where required by state regulations.
